Mini Egg Brownie recipe!


Mini Eggs are pretty much an Easter staple right?! They come in pretty pastel colours and are oh-so delicious - but what could make them even better? Brownies, of course! We're talking chewy centred, crispy edged, chocolate packed kinda brownies that'll be eaten no sooner than you've served them!

Today, we're going to share our fave brownie recipe with you so that you can whip up a batch to share with your loved ones this Easter season. We've worked from the HandleTheHeat recipe and added some of our own twists to it!

You'll need to get together;
♥ 250g granulated sugar
♥ 70g unsalted butter
♥ 2 large eggs plus 1 egg yolk, cold
♥ 1 tsp vanilla extract
♥ 75g cocoa powder
♥ 80ml vegetable oil
♥ 65g flour
♥ 1/8 tsp baking soda
♥ 1 tbsp cornstarch
♥ 1/4 tsp salt
♥ 50g dark chocolate chips
♥ 50g white chocolate chips
♥ 1 packet Cadbury Mini Eggs

To make your brownies;

 Pre-heat your oven to 325F/160C, spritz your brownie pan with coconut spray oil and line it with baking paper, setting aside.

♥ Melt your butter remove from the heat and add the sugar in, mixing until smooth.

♥ Now you can whisk in your eggs, egg yolk, oil and, of course, the vanilla.

 Sift in your cocoa powder and flour, baking soda and cornstarch, mixing them in until combined. Yummy!

 Add your salt in to the mix and then add those sweet chocolate chips.

 Now, open up your Mini eggs and set 5-6 whole eggs aside. With the remaining eggs, hold the packet shut and firmly give them a whack with a rolling pin a few times to break them up into smaller pieces.

 Add the pieces into your mix and combine evenly!

 Pour your brownie batter into your pan and place in the oven for 20-25 minutes.

*The trick to getting chewy brownies is to check them and remove them from the oven before they turn dry or cakey. Pop a toothpick into the centre of your brownies and if it is still slightly soft in the centre then they are ready to be removed from the oven, you want to remove them before the centre comes out crumb-like.*

 Once your brownies are removed from the oven you can place your spare Mini Eggs on top of them. Give each one a hit with your rolling pin to break it in half and arrange them on top of your brownies how you like. If you put them on top of the brownies before you bake them then they may sink in and you wont see them on top!

 Allow your brownies to cool before you cut and serve them.
