Watermelon cookie recipe!
Summer time is here! BBQ's, Pool Parties and picnics; there is nothing better than gathering together with your loved ones and enjoying an afternoon in the sun! And, today we are showing you how to get this adorable treat for all of your Summertime hangouts - its a sweet twist on a seasonal favourite, juicy watermelon!
Our watermelon cookie starts with a crumbly shortcrust base; simple to make and filled with buttery yumminess!
You'll need
- 2 cups plain flour
- 1/2 cup caster sugar
- 1 cup butter
To make it;
- Preheat your oven to 160C/325F
- Start by combining your flour and sugar in a large bowl
- Next, rub in the butter using your fingertips. Keep going until it is fully combined and your mix resembles sand.
- To follow, squash the crumbs between your palms so that they form a dough and then press this into a round cake pan.
- Pop into the oven and allow to bake until pale golden (not brown) - around 20-25 minutes.
- Allow your cookie to cool completely.
Lets top that now with something smooth and creamy, to compliment the crunchy biscuit perfectly!
You'll need;
- 1 cup cream cheese
- 1 cup marshmallow flluff
- 1 cup whipped cream
To make it;
- Begin by beating the cream cheese until it is smooth and light
- Add in your marshmallow fluff and continue to beat until combined
- Now you can fold in your whipped cream gently
- Spread over the top of your cookies with a spatula
Lets bring it all together now with that watermelon style topping - juicy and delicious!
You'll need;
- 4 kiwi fruits
- 2 pounds of fresh strawberries
- Milk chocolate chips
To make it;
- Peel your kiwis and cut them into thin slices - then cut those slices in half across the middle
- Cut your strawberries into quarters - removing any white bits and just keeping the red parts of the fruit. Now, cut them into smaller slices, random sizes work well!
- Next, cut your cookies in half so they will have the shape of a slice of watermelon
- Its time to arrange your fruit! Start with the kiwi, placing the slices around the curved edge so that they over lap.
- Now your strawberries - sprinkle them onto the cream cheese spread evenly
- Finally, pop the choc chips on to mimic watermelon seeds - you can use as many as you prefer.
All done! How delicious! Your cookie is sure to be the hit of any party, simply refrigerate it until you are ready to slice and serve!
