Strawberry Banana Bread Recipe

So you've got the perfect afternoon tea look thanks to our previous post .. but what about the food?! Afternoon tea is filled with delectable cakes and treats, bursting with flavours and colours, and we think this strawberry banana bread will be the perfect addition to any summer afternoon tea. It's simple to make and the strawberries take a classic banana bread to the next level!

This recipe will make 1 large loaf or can be split in half for 2 smaller loaves. The ingredients you will need are things you will find at home, and we got our fruits fresh from a local market; 

. 2 large eggs
. Half cup softened butter
. 1 cup granulates sugar.
. 3 over-ripe, mashed bananas
. 2 cups self raising flour
. 1 tsp Baking powder
. 1 cup fresh strawberries diced and tossed in 1 tbsp flour.

To make your loaf, begin by preheating the oven to 180C and spray your loaf tin(s) with a none stick spray.

1. In a large bowl cream together the butter and sugar until the consistency is light and fluffy
2. In a separate smaller bowl beat the eggs and then add them into the sugar mixture, blending until fully combined. You can then add in the mashed bananas, too.
3. Now, sift the flour and baking powder into the mixture, you can then begin to slowly and gently fold it in until it is just combines. Be sure not to over mix!
4. Finally, fold in the floured strawberries.
5. You can then pour the batter into your tin(s) and pop them into the oven for 45 minutes or until a toothpick inserted into centre comes out clean.
* Be sure to let the loaves cool completely before removing them from their pans.

It really is that simple! You can serve your loaves on a cake stand or slice it up and serve with dainty napkins. This cake will be a hit with everyone at your afternoon tea, so grab a slice before it disappears!
