Royal Lemon&Elderflower cake recipe!

Unless you've been living under a rock for the past few months, you'll know that this weekend is the Royal wedding of prince Harry and Meghan Markle! Of course, we're looking forward to seeing 'the' dress, the flowers and having a good old get together with our friends to celebrate, but one thing we are especially excited for is the cake! Yummy!

It has been announced that the happy couple will be indulging in an elegant lemon and elderflower cake on their big day, and we just couldn't resist but to bake our own, so today we're sharing our recipe with you too! The cake is simple to make and looks super pretty with that home made charm. Topped with real blooms it'll make the perfect centre piece for your at home royal wedding celebrations!

 

FOR THE CAKE
✿ 175g of self raising flour
✿ 1/2 teaspoon baking powder
✿ 175g soft butter
✿ 175g caster sugar
✿ 3 eggs (Beaten)
✿ 1 tbsp Elderflower cordial
✿ The Zest of 1 lemon
FOR THE SYRUP
✿ The Juice of 1 lemon
✿ 1 tbsp Elderflower cordial
✿ 55g caster sugar
FOR THE CREAMY FILLING
✿ 115g icing sugar (sifted)
✿ 40g soft butter
✿ 1-2 tbsp edlerfower cordial
✿ plus 3-4 tbsp lemon curd
FOR THE TOPPING
✿ 110g icing sugar (sifted)
✿ 2-3 tsp lemon juice
✿ white decorations and yellow flowers (edible if you like!)

✿ Start by pre-heating your oven to 180C (160C fan ovens), to get an even heat.

✿ Sift your flour and baking powder into a large bowl and set aside.

✿ In a seperate bowl combine the butter and sugar until smooth and fluffy.

✿ Add in the beaten eggs, lemon zest and elderflower cordial, combining it all until smooth!

✿ Add the wet ingredients into the dry ingredients and mix it all together, making sure there are no lumps in your mix.

✿ Divide the mix between 2 greased baking tins and bake them for 30-40 minutes

✿ Turn your cakes out onto a wire rack.


✿Lets work on the fillings. Put the lemon juice, elderflower cordial and sugar into a saucepan and heat over a very low heat until the sugar is all dissolved.

✿  While the cakes are still warm, poke a few holes in them using a skewer and drizzle your syrup over with a tablespoon, allowing it to soak in! This will make the cake super moist and flavoursome!

✿ For the creamy filling, put the icing sugar, butter and elderflower cordial into a bowl and beat until smooth and creamy.

✿ Spread the creamy filling onto one of your cakes and the lemon curd onto the other (we put our lemon curd into a small bowl and gave it a quick mix to make it smoother and easier to spread first), then sandwhich them together.

✿ For your topping, simply combine the icing sugar and lemon juice and drizzle it over the top, allowing it to cascade down the sides of your cakes. Once it has set a little, use your Bella&Bear pointed tweezers to gently press some white decorations and flowers onto it.

Present your cake on a glass stand and be sure to hand out the cake forks as this cake can be tricky to hold with all of the layers!
